Buffalo Chicken Salad


BUFFALO CHICKEN SALAD
(Phase 1 Friendly!)

Prep time: 10 minutes      Cook time: 15 minutes    Serving Size: 1 salad or 4 leaf wraps    Yield:  3


INGREDIENTS:
1.5 lb boneless skinless chicken breasts (approx. 4 breasts)
3 tsp olive oil
Real salt to taste
Onion Powder to taste
Garlic Powder to taste
Pepper To taste
Louisiana hot sauce (or hot sauce of your choice)
Lettuce of your choosing, 12 whole leaves that can hold the filling i.e., butter, iceberg, Romaine

DIRECTIONS:
1) Cut chicken breasts into strips, sprinkle with sea salt, pepper, onion and garlic powders.
2) Cook in olive oil and toss with hot sauce. 
3) Spoon filling evenly into each of the 12 whole lettuce leaves, secure with a fancy toothpick and serve with: Shredded Red Cabbage or Radicchio, Diced Green onions, Chopped Celery, cucumbers, bell peppers, Tomatoes can be added but remember serving is ½ cup and they are on the occasional list.
4) Top with Walden Farms Blue Cheese or Walden Farms Ranch dressing.
