Lemon Dijon Asparagus


LEMON DIJON ASPARAGUS
(Phase 1 or 2 Recipe)


Prep time5 min        Cook time:  10 min        Serving Size: 2 C veggies        Yields:  2             

INGREDIENTS:


1 lb Fresh Asparagus (about 15 spears)
1 Tbsp Fresh Lemon juice
2 tsp Olive oil
1 tsp Dijon mustard


Sea salt and pepper to taste

DIRECTIONS:
1)    Preheat oven to 450 degrees. Place asparagus on foil lined baking sheet.
2)    Brush with 1 tsp of the olive oil and tightly align.
3)    Broil/bake in oven for 8 to 10 minutes, turning once.
4)    Meanwhile, whisk remaining olive oil, lemon juice and mustard. When asparagus is done, pour over the top.

Recipe Options: Can add some freshly minced garlic to taste as well.
