Grilled Vegetables


GRILLED VEGETABLES
(Phase 1 or 2 Recipe)


Prep time10 min        Cook time:  15 min        Serving Size2 C veggies        Yields:  6                     


INGREDIENTS:


10 Cherry tomatoes


1 Medium green pepper and 1 Medium red pepper
1 C sliced mushrooms
2 Celery stalks; thinly sliced
1 Medium zucchini; thinly sliced
1 Tbsp each Olive oil and Apple Cider Vinegar
1 tsp Lemon juice
1 tsp dried basil
1 Clove garlic; minced
Sea salt and pepper to taste




DIRECTIONS:
1)    Divide veggies between 2 pieces of foil (18” square) OR make 6 smaller individual squares.
2)    In a bowl, combine remaining ingredients and drizzle over veggies.
3)    Fold foil around vegetables and seal tightly.
4)    Place packets on grill and cook covered for 10-15 minutes or until veggies are tender crisp.

Recipe Options: Add any other select vegetables that you may like.
