Veggie Stir Fry


VEGGIE STIR FRY
(Phase 1 Friendly!)

Prep Time: 10 min      Cook time: 15-20 minutes     Serving: 2 cups           Yield: 2 servings


INGREDIENTS:
1-2 Tbsp Olive oil                    1 Large Onion                                     2 cloves of garlic
1 Green pepper                       1 package mushrooms                        8-12 bean sprouts
3 cups broccoli                        1-2 bunches baby boc choy                 2 tsp minced ginger
¼ cup soy sauce                      1 tsp chili sauce (adds heat)*


DIRECTIONS:
1) Heat large sauté pan over med-high heat…add olive oil, then mushrooms, & peppers.  Cook until these begin to soften, stirring frequently.
2) Add boc Choy, broccoli, garlic, ginger, soy cause, and chili sauce and stir to mix evenly.
3) Cover and simmer about 5 minutes, stirring periodically
4) While broccoli is still firm, add bean sprouts.  Cook until broccoli is desired tenderness.

5) Remove into heat and add onions (not cooking them, leaving them RAW) portion into 2 cup quantities for your lunch or dinner.
